Hello, I am Madhura and welcome to MadhurasRecipe Marathi We are making tiffin special recipes. We saw how to make sandwiches in last episode. In today’s episode let’s see how to make 4 healthy and quick rice recipes. Let’s begin with corn fried rice. Heat up 1 tsp oil in a pan. Add 1/2 tsp chopped garlic and fry it a little. Add 1/2 cup finely chopped onion, Add 1 cup corns and 1 tbsp chopped carrot. You can add red capsicum or tomato instead of corn. If you are using tomato, add when corn is almost cooked. Fry on medium heat for about 5-7 minutes until corns are cooked. I have fried corn and onion nicely for about 4-5 minutes. Onion has turned golden and corn also has begun to turn light golden. Add 1/4 cup finely chopped cabbage. This is optional. You can skip it if your kids don’t like cabbage. Add 1 tbsp chopped spinach. If you want to add green veggies in your kids’ diet, then this is the easiest trick. Generally what I do is, I wash and chop the spinach finely. If I make anything like pohe, upma or lemon rice, I add little spinach while frying onion. So that spinach cooks quickly and gets easily blended in any recipe. Spinach contains lots of iron. So I mostly add spinach in almost all veggies. Let’s add other ingredients now. Add 1 tsp soya sauce. I am using chili sauce. You can adjust this according to your kids’ taste. You can add ketch up instead of chili sauce. Add 1/4 tdp black pepper powder, Salt to taste. Add salt carefully. I have added salt while cooking rice. So adding salt just for taste to veggies. Mix well. This is tempting aroma. I have 2 cups boiled separated rice. My kids like different types of rice. If they have morning school, I mostly make more rice previous night. So that we make something different from it like this next morning. I have fried rice on high heat for about 4-5 minutes really good. Corn fried rice is already. Corn pulao is already. Let’s make paneer tawa pulao. This is really nice rice for kids as well as adults. Heat up 1 tsp oil in a pan fry 1/2 cup onion. For about a minute. When onion turns soft on little frying, add 1 tsp ginger garlic paste. Fry for another minute or so. Add 1/4 cup finely chopped green pepper, mix well. Add 1/4 cup green peas, 1/4 cup tomato and 1 tsp pav bhaji masala. You can add red chili powder according to your kids’ taste. Mix well and fry for about a minute. After frying the masala really good, add 125 gm chopped paneer. Add salt to taste and mix well. Cook paneer a little for about 4-5 minutes. After frying this nicely, add a little spinach. This is my secret. Mix well. Spinach cooks quickly. There is no need to cook it separately. Add 1 tsp lemon juice. Add 2 cups boiled rice. Mix well and fry. Tawa paneer pulao is already. Turn off the gas. A Add lots of finely chopped coriander. Paneer tawa pulao is already. Next recipe is green peas pulao. means matar bhat or matar pulao. Heat up 1 tsp oil in a pan. Add 1/2 tsp cumin seeds, bay leaf. I am not adding whole spices as kids generally don’t like whole spices while eating. So I will add biryani masala instead of whole spices. Add 1/2 cup finely chopped onion and fry it a little. When onion is a little soft, Add 1 tsp ginger garlic paste and fry it for about a minute. Add a piece of green chili. You can take out this green chili when rice is cooked. Or you cak skip green chili. Add 1/2 cup green peas and 1 tsp chopped carrot for nice colour. Mix well. Cover and cook until peas are nicely cooked. I have cooked peas for about 5 minutes. Peas and carrot are cooked well. Add 1/2 tsp biryani masala. This is store bought biryani masala. Mix well. Aroma of biryani masala is just awesome. Add 2 cups boiled rice and salt to taste. Fry this really good. Cover and cook. I have cooked green peas pulao covered on medium heat for 5 minutes. Wow.. Flavour of this pulao is really good. While serving to kids or packing their tiffin, remove green chili and bay leaves. I have taken out green peas pulao in tiffin. Looking awesome. Let’s see how to make egg fried rice.Heat up 1 tsp oil in a pan. Add 1/2 tsp finely chopped garlic. Fry it for just about 30 seconds, not more than that. After frying garlic, Add 1/2 cup onion and fry it about just 30 seconds. After frying onion add 1/2 cup finely chopped green pepper. And 1/2 cup cabbage. Fry this too for just about a minute. After frying onion, green pepper and cabbage, Add 1 tsp soya sauce, 1/4 tsp black pepper, 1/4 tsp chili sauce. If your kids’ don’t eat too hot food, then you can add tomato sauce to tomato ketch up instead of chili sauce. After frying well, remove all veggies aside. And break 2 eggs in this. Add a little black pepper, a pinch of salt in the eggs and scramble it. Make bhurji. Do not make omelette. Break the egg and scramble it. Scramble or bhurji is already. Mix it with the veggies.
